Curtis Scott’s Bio to Follow:
Alex Novaa grew up in DeLand, Florida. His journey with food began basic enough, eating whatever he was supposed to, mostly. Things changed when he moved to Madrid and had a food awakening. The madrileño food culture emphasized freshness, quality, stellar technique, and long enjoyment thereof. His perception of flavor shifted. The shift continued when he moved to Washington D.C. and took an internship at the modernist Green Pig Bistro. Next, he took a line cook position at his mom’s bistro, Dally in the Alley. The Dally’s health-centered approach was a watershed moment—food really can be medicine. Combined with his passion for teaching yoga, Alex’s cooking reflects the reality that you are what you eat. His favorite foods are plants, lovingly sliced and diced, lightly cooked, with maybe a sauce or two.
